When my husband and I first started dating I was overjoyed when he invited me to his family’s Thanksgiving dinner. I wanted to show up with an amazing dessert and really WOW them. So, I asked my boss at the time what she thought I should take to dinner. She then, from memory, wrote down this Easy Bake Pumpkin Roll Recipe.
I have to tell you…I was a little intimidated as I stared at the recipe written on that piece of paper. I was not often found in the kitchen baking as a college kid. My time was spent working, going to class and studying. Not baking.
I did it though. I made that Easy Bake Pumpkin Roll Recipe. I brought it to my boyfriend’s (now husband) family Thanksgiving feast and I rocked it! They all loved my dessert!
I’ve tweaked it a little over the years and made it my own. I also {accidentally} one year dusted it with flour instead of dusting it with powdered sugar. His family won’t let me forget that mistake! Every once in a while they’ll tease me and ask for the “pumpkin roll dusted with flour.” It’s actually pretty funny when you think about. So…P.S. don’t mess up and dust your delicious pumpkin roll with flour. Go for the powdered sugar instead!

Gather Your Ingredients
Ingredients
- 3/4 cup Flour
- 1/4 teaspoon Salt
- 1 teaspoon Baking Powder
- 1 1/2 teaspoon Pumpkin Pie Spice
- 1 cup Sugar
- 3 large Eggs
- 2/3 cup Pumpkin Puree
- 1 teaspoon Vanilla
- 1 cup Pecans finely chopped (optional)
Filling
- 1 package Cream Cheese (8 ounces)
- 2 tablespoons Butter
- 1 teaspoon Vanilla
- 1 cup Powdered Sugar, more for dusting
Steps
Mix together dry ingredients first. Then mix in with beaten eggs, vanilla, and pumpkin puree.
Spread mixture into greased and floured jelly roll pan. Add pecans if you’d like! Bake in oven at 350 degrees for 15 minutes.
Remove from oven. Let sit for just 3 minutes, don’t let cool completely. Turn pumpkin roll out onto a thin dish towel dusted with powdered sugar. Tip: Be very generous with the powdered sugar so the pumpkin roll doesn’t stick to the towel.
Gently roll pumpkin roll up in dish towel. Let sit while mixing filling.
I like to prepare my cream cheese filling, while my pumpkin roll is baking. Mix cream cheese, powdered sugar, vanilla and butter together until creamy smooth.
Carefully unroll cake and spread the cream cheese filling evenly over the pumpkin roll.
Re-roll the pumpkin roll. Cover with plastic wrap and place in refrigerator for at least one hour before serving.
Unwrap pumpkin roll and slice. Sprinkle with powdered sugar. Serve.
